Powdered Eggs:
Eggs are extremely perishable. Eggs must be kept refrigerated and have a relatively short shelf life. Powdered, dried eggs provide a convenient alternative to fresh eggs and add quality and consistent performance to the list of attributes.
Powdered eggs are fully dehydrated eggs. The major advantages of them over fresh eggs are the price, reduced weight per volume of whole egg equivalent, and the shelf life. The risk of bacterial contamination due to improper handling is significantly reduced and the clean up time is reduced as well. For camping and hiking excursions there is no better way to carry eggs than in powdered form. Just add water and cook up scrambled eggs in no time. The ease and benefits of Powdered, Dried Egg Products are tough to beat.

For Baking:
For bakers, powdered egg products provide consistency from batch to batch and are always ready. Egg solids blend well with other dry ingredients and can be used immediately without cracking or thawing. Or for those of us (me) who are clumsy, you could keep that piece of shell out of your favorite cookie dough.

Egg products are processed in sanitary facilities under rigorous inspection by the United States Department of Agriculture. The first step in making egg products is breaking the eggs and separating the yolks and whites from the unwanted shells. Eggs are processed by automated equipment that move the eggs from flats, wash and sanitize the shells, break the eggs and separate the whites and the yolks or keeps them together for whole egg products. The liquid egg products is filtered, mixed, and then chilled prior to additional processing. This liquid egg product (in a pasteurized format) is what you get when you re-hydrate your powdered egg product. Powdered Eggs provide all the natural goodness of an egg in a convenient, non-perishable package. From here the egg product is pasteurized. The law requires that all egg products distributed for consumption be pasteurized. This means they must be rapidly heated and held at a minimum required temperature for a specified time. This process destroys Salmonella and any other bacteria, but does not cook the egg or affect the color, flavor, or nutritional value. Dried egg products are powdered by spraying the liquid egg into a heated drying room. The powder is left in the drying room for a specified time to get the desired consistency.

I love my sweets!  I love Honeyville Brownies!  The original recipe came from a Reader's Digest Best of the Best article in May 2007 but I've adapted it to use the fudgey goodness that is Honeyville Brownies.  These brownies are over the top awesomeness.  Bake them for breakfast....or maybe wait until nap time, but make them!

Ingredients:
Brownies:
1 (19.8 oz.) Honeyville Fudge Brownie Mix
1/4 c. Honeyville Powdered Whole Eggs
1/3 c. Vegetable Oil
3/4 c. Water

Toppings:
3 c. Mini Marshmallows
1/2 c. Butter, softened
1/3 c. Cocoa (the baking kind, not the hot drink mix kind)
1/3 c. Evaporated Milk
1 and 2/3 c. Powdered Sugar

Directions:
Begin by making the brownies by preheating the oven to 350 degrees.  In a bowl mix brownie ingredients together.  Spread brownie batter in a greased 9x13 pan and bake for 27 minutes.  Top brownies with marshmallows and bake for an additional 3 minutes.  Mix the remaining topping ingredients until smooth.  Top marshmallows with chocolate frosting. Enjoy my friends, we sure did!

Similar to other beans, the common bean is high in starch, protein and dietary fiber and is an excellent source of iron, potassium, selenium, molybdenum, thiamine, vitamin B6, and folic acid. The small, white navy bean, also called pea bean or haricot, is particularly popular in Britain and the US, featured in such dishes as baked beans and even pies, as well as in various soups

Dry beans will keep indefinitely if stored in a cool, dry place, but as time passes, their nutritive value and flavor degrade and cooking times lengthen.
  • Store in cool, dry area.
  • After opening, store the dried beans in an airtight container or place original package in a resealable plastic bag.
  • Storage time shown is for best quality only — after that, the beans’ texture, color or flavor may change, but in most cases, they will still be safe to consume if they have been stored properly.
  • If beans develop an off odor, flavor or appearance, they should be discarded.
  • “Best By,” “Best if Used By,” and “Use By” dates on commercially packaged foods sold in the United States represent the manufacturer’s estimate of how long the product will remain at peak quality — in most cases, the beans will still be safe to consume after that date, as long they have been stored properly and the package is not damaged.

Dried beans are almost always cooked by boiling, often after having been soaked for several hours. While the soaking is not strictly necessary, it shortens cooking time and results in more evenly textured beans. In addition, discarding one or more batches of soaking water leaches out hard-to-digest complex sugars that can cause flatulence, though those who eat beans regularly rarely have difficulties with flatulence as intestinal microbes adjust. There are several methods including overnight soaking, and the power soak method, which is to boil beans for three minutes, then set them aside for 2-4 hours, then drain and discard the water and proceed with cooking. Common beans take longer to cook than most pulses: cooking times vary from one to four hours but are substantially reduced with pressure cooking.

Kidney Beans:
Kidney beans come in various colors (mainly red) but are kidney-shaped beans. Their firm, creamy, white flesh and full-bodied flavor make these beans a popular choice for chili, soups, and salads because they absorb the flavors of seasonings and the other foods with which they are cooked with. Both dried and canned kidney beans are available throughout the year. Dried beans are generally available in prepackaged containers as well as in bulk bins.
Health Benefits:
Kidney beans are a very good source of cholesterol-lowering fiber, as are most other beans. In addition to lowering cholesterol, kidney beans’ high fiber content prevents blood sugar levels from rising too rapidly after a meal, making these beans an especially good choice for individuals with diabetes, insulin resistance or hypoglycemia. When combined with whole grains such as rice, kidney beans provide virtually fat-free high quality protein. But this is far from all kidney beans have to offer. Kidney beans are an excellent source of the trace mineral, molybdenum, an integral component of the enzyme sulfite oxidase, which is responsible for detoxifying sulfites. Just one cup of cooked kidney beans supplies 177.0% of the daily value for molybdenum. Sulfites are a type of preservative commonly added to prepared foods like delicatessen salads and salad bars. Persons who are sensitive to sulfites in these foods may experience rapid heartbeat, headache or disorientation if sulfites are unwittingly consumed. If you have ever reacted to sulfites, it may be because your molybdenum stores are insufficient to detoxify them.

A cup of cooked kidney beans provides 45.3% of the recommended daily intake for fiber. Soluble fiber forms a gel-like substance in the digestive tract that binds with bile (which contains cholesterol)and ferries it out of the body. Research studies have shown that insoluble fiber not only helps to increase stool bulk and prevent constipation, but also helps prevent digestive disorders like irritable bowel syndrome and diverticulosis.

In a study that examined food intake patterns and risk of death from coronary heart disease, researchers followed more than 16,000 middle-aged men in the U.S., Finland, The Netherlands, Italy, former Yugoslavia, Greece and Japan for 25 years. Typical food patterns were: higher consumption of dairy products in Northern Europe; higher consumption of meat in the U.S.; higher consumption of vegetables, legumes, fish, and wine in Southern Europe; and higher consumption of cereals, soy products, and fish in Japan. When researchers analyzed this data in relation to the risk of death from heart disease, they found that higher legume consumption was associated with a whopping 82% reduction in risk!
A study published in the Archives of Internal Medicine confirms that eating high fiber foods, such as kidney beans, helps prevent heart disease. Almost 10,000 American adults participated in this study and were followed for 19 years.
Kidney beans’ contribution to heart health lies not just in their fiber, but in the significant amounts of folate and magnesium these beans supply. Folate helps lower levels of homocysteine, an amino acid that is an intermediate product in an important metabolic process called the methylation cycle.
Kidney beans’ good supply of magnesium puts yet another plus in the column of its beneficial cardiovascular effects. Magnesium is Nature’s own calcium channel blocker. Studies show that a deficiency of magnesium is not only associated with heart attack but that immediately following a heart attack, lack of sufficient magnesium promotes free radical injury to the heart. Want to literally keep your heart happy? Eat kidney beans–a one cup serving provides 19.9% of your daily needs for magnesium.

Different varieties of this truly amazing legume are available throughout the year.
The soybean is the most widely grown and utilized legume in the world and one of the most well researched, health-promoting foods available today. Like other beans, soybeans grow in pods, featuring edible seeds. While we most often think of them as being green, the seeds can also be yellow, brown or black.
Health Benefits:
Soybeans’ key benefits are related to their excellent protein content, their high levels of essential fatty acids, numerous vitamins and minerals, their isoflavones, and their fiber. How to Select and Store
Dried soybeans are generally available in prepackaged containers as well as bulk bins. Canned soybeans can be found in many markets. Unlike canned vegetables, which have lost much of their nutritional value, there is little difference in the nutritional value of canned soybeans and those you cook yourself. Store dried soybeans in an airtight container in a cool, dry and dark place where they will keep for up to 12 months.
Pre-soaking:
The first method is to boil the beans for two minutes, take pan off the heat, cover and allow to stand for two hours. The alternative method is to simply soak the beans in water for eight hours or overnight, placing pan in the refrigerator so that the beans will not ferment.
A Few Quick Serving Ideas:
  • Replace some of the wheat flour in your favorite baked goods recipe with soybean flour and increase the protein content of your cookies, cakes, muffins and breads.
  • Mix sprouted soybeans into salads or use as toppings for sandwiches.
  • Frozen edamame is simple to prepare and makes a great snack or appetizer. Just add the soybean pods to slightly salted water and boil for approximately 10 minutes.
  • Add soybeans to vegetable stews and soups.
  • Use soymilk in place of cow¡¯s milk as a beverage and cereal topper.
Allergic to soy?
It turns out that soybeans are one of the foods most commonly associated with allergic reactions. Individuals with already existing and untreated kidney or gallbladder problems may want to avoid eating soybeans.

  • ¼ tsp real salt
  • ¼ tsp no salt (potassium chloride) -
  • ¼ tsp baking soda
  • 1 ½ tsp sugar
Mix into 4 cups of water. Give the person small sips of the solution every five minutes, even if he vomits, until he begins to urinate normally. The drink can be given with fruit juices as a flavoring.
The person may also drink thin vegetable soup, or the water in which rice or barley has been cooked.

(Lana said that we need to use all four items in this rehydration formula to balance our electrolytes. She got this formula from a nurse at the LDS hospital.)

Note: This rehydration formula can also be used to PREVENT dehydration when water is scarce. Put it in the water you do have. Your cells will absorb the water more readily with salts present and reduce the onset of becoming dehydrated rather than fluids being “flushed” through your kidneys. Prevention is always better than the cure!

Pasta:
Pasta is one of the more popular and versatile foods you will find on the dinner table. It comes in many forms and can be made at home, purchased fresh, or purchased dried for long term use. We’ll obviously be going over the “long term storage” pasta. Pasta is great in hot or cold salads, italian entrees, casseroles, or even mac & cheese! If you have more reasons let us know!
Storage:
Uncooked Pasta
Store uncooked, dry pasta in your cupboard for up to one year. Keep in a cool, dry place. Follow the “first-in, first-out” rule: Use up packages you’ve had the longest before opening new packages.
Cooked Pasta
Refrigerate cooked pasta in an airtight container for 3 to 5 days. You may add a little oil (1-2 tsp. for each pound of cooked pasta) to help keep it from sticking. Because cooked pasta will continue to absorb flavors and oils from sauces, store cooked pasta separately from sauce.
Freezing Pasta
The best pasta shapes for freezing are those that are used in baked recipes, such as: lasagne, jumbo shells, ziti and manicotti. You’ll have better results if you prepare the recipe and freeze it before baking. To bake, thaw the dish to room temperature and bake as the recipe directs.
If you keep things like pasta or boxed pasta mixes in the original package for longer than the expiration date it can go bad. But when you take them out and put them in buckets, foil pouches or your own vacuum sealed bags they can last for decades.

VITAMIN D


 It that time of year to support our immune systems and guard against health risks.  Watch this ten minute video about Vitamin D3. Vitamin D3 is a hormone and its a very strong anti-viral that guards against the flu.  It also guards against deformed bones,cancer, multiple sclerosis (MS), heart disease, and depression.  I keep Vitamin D3 in my food storage.  You may consider it too.

In reference to this weeks EP goal- As you plan on which dressings to store, please think of storing some dressings you may enjoy on a a sprouted salad (JIC no greens are available).
Here is a great video on how to sprout many types of grains and seeds.  Here is a recipe for one salad. 
Winter Sprout Salad
Fresh Winter Salad
1 cup each:
Chinese bean sprouts
Alfalfa sprouts
Spicy sprouts

 
One-half cup each: Mixed sprouts
Sunflower seed sprouts
Wheat sprouts
Cabbage sprouts

 
1 diced red bell pepper
and/or
1 grated carrot
Gently toss all ingredients. Serve with Parsley-Garlic Dressing (recipe at right) or your own favorite dressing.

Week # 40: 3 Quarts of Salad Dressing dressing= at the very least 96 oz (12 bottles of 8oz) or however much you think you’ll need.

Salad Dressing:
Salad dressing is a sauce typically poured over salads such as: green salads; vegetable salads; salads of pasta, legumes, or grains; mixed salads incorporating meat, poultry, or seafood; and fruit salads. Salads can include a mixture of cold or hot foods, often including raw vegetables and/or fruits. Salad dressing can also be used as a marinade for your meat and even a dipping sauce. So don’t think of salad dressing as just something to pour over your lettuce. It’s so much more than that!
Storage:
Salad dressing comes in 8oz, 16oz, larger or smaller sizes. If you like s certain kind of dressing get more of it. If you’re getting something to try just get what you think you’ll need. Italian dressing is one which is useful for marinading as well as a great ingredient for adding to your crock pot chicken. Try it! Not to mention your standard salads. Store your “commercial” dressing as usual, in a cool dark place and always use by the expiration on the bottle. Usually 12 months depending on the dressing. You’ll find salad dressing so easy to use and yummy, you’ll want to get lots of them. I also like to store Buttermilk Ranch Dressing in the small packets in powder form.  I can add it to my White Chicken Chili recipe and other recipes to add spice and flavor. 
 (Wow! I sound like a salad dressing sales person. LOL)
Remember this isn’t something you store for 30 years, this is something you rotate through yearly. It’s easy to rotate salad dressing because you can use it in so many ways and quick.

Toilet seat lids just went on sale at Emergency Essentials $7.99 (reg price: $11.95). This is a great price and you can use the lid on a standard 5 gallon bucket that you can buy at Lowe's or Home Depot for ~$3 or go down to your local bakery and get one for free. Here are a couple other items on sale at Emergency Essentials that you might be interested in: Reliance Double Doodie Waste Bags with Bio-gel $13.49 (reg price: $17.95), Iosat Potassium Iodide Tablets $9.99 (reg price: $10.95. Obviously not for sanitation purposes but great to have in your 72 Hour Kits nonetheless. It works by saturating the thyroid with stable iodine so it will block the thyroid’s absorption of cancer-causing iodine released from a nuclear reactor or nuclear bomb. I highly suggest getting this, especially because we live near San Onofre, (these group specials)

                                                                                             Laundry

A friend of mine just less than two weeks ago had a load of laundry running in the washing machine when it started beeping, telling her that the pump was jammed. Ahhh!! She really needed to get the baby's bedding washed so he could take a nap, not to mention the baskets of other laundry to wash. Fortunately, she was used to hand washing her clothes (and cloth diapers!) so she just whipped out her Wonder Wash, and was able to clean a few small loads of laundry until her husband could fix the washer later that evening. Click on the highlighted words like wonder wash above and they you can wath videos of each product. 
Prior to moving here she lived in a small apartment, with only a community laundry room with coin-op machines, and paying for laundry was expensive! Some of her friends were budgeting $200/month to wash their family's laundry! She decided to find a way to save money and ended up loving her handy little Wonder Wash which she bought for $40 (basically it's a hand cranked machine. You just fill it with water, add a TBSP of detergent with the clothes, spin it for 60-120 seconds, empty dirty water, and then rinse with clean water and spinning for another 30 seconds). Over the course of a few years she saved oodles of money, and now that she has access to a full size washer and dryer she still loves to use her Wonder Wash on occasion and she loves that she has a way to wash clothing (without killing her hands!) in an emergency. 

Emergency Essentials does sell a similar machine called the Wonder Clean (I've read online that it's a knock off of the Wonder Wash, but the reviews look good.)

There are other great options out there too, like this Mobile Washer. It looks like a toilet plunger (but specifically designed for laundry) and it's pretty inexpensive at $14.95 (Emergency Essentials) but watch for when they go on sale and then get one then. This would be great to have in an emergency. 

Laundry Kit - Christmas Idea

Supplies Needed:
  • 5-gallon bucket with lid (cut hole in middle of lid for plunger handle to fit through)
  • Mobile Washer 
  • Store in bucket:
  • Laundry detergent
  • Stain remover/stain stick
  • Vinegar (add 1/2 cup to rinse water) helps remove soap
  • Rope (for clothes line)
  • Clothes pins
  • Rubber gloves
To Use:
  1. Empty contents of bucket.
  2. Place water, small amount of detergent, and clothes in bucket.
  3. Move plunger up and down for a few minutes or until clothes are clean.
  4. Remove soapy clothes and ring them out.
  5. Dump out soapy water (on your garden or lawn.)
  6. Place soapy clothes in bucket and fill with clear, clean water.
  7. Add 1/2 cup vinegar to rinse water.
  8. Move plunger up and down to rinse clothing.
  9. Wring out clothes and hang to dry.
Conserve water - use rinse water for next load of laundry.
NOTE: You could store two 5-gallon buckets, stack one inside of the other. Use one bucket for the soapy water and the other for the rinse water. You may be able to wash and rinse a couple of batches of clothes without changing the soapy water depending on how dirty the clothes are.

Homemade Liquid Laundry Soap-  yield: 5 gallons

4 cups hot tap water
1 Fels-Naptha Soap bar
1 cup Washing Soda
½ cup Borax

Grate bar of soap and add to saucepan with water. Stir continually over medium-low heat until soap dissolves and is melted.

Fill a 5 gallon bucket half full of hot tap water. Add melted soap, washing soda and Borax. Stir will until all powder is dissolved. Fill bucket to top with more hot water. Stir, cover and let sit overnight to thicken. To make it easy to use, pour it into an old laundry detergent container.

Optional: Add 10-15 drops of essential oil per 2 gallons. Add once soap has cooled. (lavender, rosemary, etc.)

I just wanted to inform those who are interested that Henry's health food store has Oil of Oregano on sale!  Regularly $27.99 on sale for $19.99 for 120 gel caps.  I think this sale goes until Oct. 2nd. Oil of Oregano

What is oil of oregano?

Oil of oregano is an essential oil derived from the leaves of the plant Oregano Vulgares. The oil is steamed-distilled from fresh or dried leaves.  It is very strong and has to be diluted with virgin olive oil to take it orally.  The active ingredients are Carvachol and Quercetin. It can be taken orally in gel caps or topically by a dropper.

What are some of the benefits?

One of the main benefits of Oil of Oregano is that it works as a very strong natural antibiotic.   For example... you have a sore throat. It most likely is viral but your may doctor prescribe antibiotics which most of the time is not useful for this purpose.  Viruses do not respond to antibiotics.  But Oil of Oregano will do the job because it is both anti-viral and anti-bacterial. 

Oil of Oregano contains Quercetin which has strong antioxidant properties and may be especially protective against breast, ovarian and endometrail cancers.

To top it off, it also is anti-inflammatory. .

 By using it topically it works against fungus like ringworm and athletes foot.  Doug Kaufmann from the national televison program called “Know the Cause” plus Dr. David Holland and many  other researchers now say that fungus is the link that causes cancer.

WARNING:  Oil of Oregano is very warming!  When the plant's phenols (a type of flavonoid) which are rich in oxygen, hits water, they create a hydrogen ion shift and produce heat which gives Oil of Oregano its germ fighting power.  The heat reaction dehydrates germs and kills them with no harm to the human tissues. Caution should be used when topically applying this oil to sensitive skin areas and keep out of your eyes. Do not take internally over long periods of time.  Can be hard on a week  liver.

 Taken orally, it works against Candida which secretes highly toxic mycotoxins into our bodies due to over eating corn, peanuts, wheat, barley, sugar, rye, cheese and alcohol.

 Oil of Oregano works against viruses that cause shingles and herpes.

It is a fantasitc decongestant and relieves coughs due to the build up of mucus in our bodies that are cozy places for bacteria to grow and cause infection.  It is good for congestion, bronchitis, asthma and sinusitis.

 As for pain, it works as well as Ibuprofen and morphine when applied topically for arthritis, back pain, and other body aches.

Taken internally it is good for food poisoning, flu, colds, cold sores, candida, tooth ache, gum diseases and fatigue.

 Another benefit is that it has high levels of antioxidants...higher than fruits and vegetables. 

Oregano is one of the six herbs that is rated highest in Progesteron-binding activites.  High levels of Progesteron suggest having protective ablility against the formation of certain cancers like breast, prostate and small basal cell and  lung cancer.

Oil of Oregano can even kill 25 of the most common bacteria in water if used in a dilution of 1:4000. It can sterilize water.  

For those individuals who have built up a resistance to antibiotics due to overuse, Oil of Oregano, Olive Leaf Extract, and Garlic are great alternatives.

Just as a note...antibiotics kill the good bacticia as well as the bad bacteria in the intestinal tract and make us more vulnerable for recurring infections. If taking antibiotics from your doctor please take probiotics after your treatment to replenish your intestinal tract with the healthy probiotics that build your immune system and prevent the over growth of Candida.

 Research shows that Oil of Oregano also stimulates the increase of oxygen in the body  and cancer does not like oxygen...In the Journal of Agriculture and Food Chemistry, Greek researchers showed that Wild Oil of Oregano even has the potential to destroy human cancer cells.  So it can work against cancer as well.

How Can I Use Oil of Oregano?

While I'm not a Naturopathic Doctor or Herbalist, I can offer some suggestions based on my experiences and the most current recommendations from research online.  Please feel free to do research yourself for all the different ways to use this amazing oil and make a note of it.

Here are a few ways you can use Oil of Oregano.

For head/chest congestion/cough, take 3 gel caps 3 times a day for 2-3 days. You can mix  one tbsp. Vicks Vapor Rub and a few drops Oil of Oregano in boiling water and breath the steam for relief too.

These super bugs that are mutating can knock you off your feet within minutes.  I know from  experience!  Just three months ago one hit me like a ton of bricks.  My head and sinuses swelled and filled...eyes watering... sneezing....throat was getting scratchy and I could feel it moving down into my chest and I was starting to cough. This only took about an hour.  I couldn't believe how quickly it was over taking me.  So I grabbed my Oil of Oregano and took 3 gel caps and took them with water.  Then I just relaxed on the couch. Within 20 minutes I could breath again and get back to work.  That evening I took 3 more gel caps before bed and continued as prescribed above. The great thing was that I didn't have to suffer with the symptoms.  By the time my nose started running again it was time to take my next dose and then I was fine.

Dandruff -  Research shows that dandruff is caused by a yeast infection in the scalp.  Oil of Oregano has shown to be effective against certain types of yeast and fungal infections.  Try mixing a few drops into your shampoo and work it into your scalp. Avoid eye contact. Repeat throughout the week for maximum effect.  You can use Tea Tree Oil on dandruff as well.

Apply topically for bug bites, toenail fungus, eczema or use as misquito repellant.
